SPRING COUSCOUS SALAD

Serves 6

Ingredients

  • 2 cups of Couscous
  • 1 cup of chickpeas (rinsed and drained)
  • 1 medium yellow or red pepper (diced)
  • 1 carrot, small (diced)
  • 1/4 cup of red onion (diced)
  • 1/2 cup of cilantro (stems removed, finely chopped)
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of salt

Directions

  1. Cook the couscous according to the package directions and let cool.
  2. In a large mixing bowl, combine the couscous with the remaining ingredients. Enjoy!

Tips: you can substitute with any of your favourite vegetables.
