- 1 avocado, cubed
- 1 cauliflower mushroom & walnut ground
- 1 black bean & corn Mexican salad
- 1/2 cup of salsa
- 4 handfuls of corn tortillas
- Divide arugula, ground and black bean & corn salad into four bowls.
- Top up with avocado, salsa and corn tortillas.
