  • 1 large bulb of fennel
  • 2-3 garlic cloves, finely chopped or grated
  • 3 tablespoons of olive oil
  • 2 tablespoons of white balsamic vinegar
  • Salt and pepper to taste


  1. Wash fennel bulb and cut into small bite-sized pieces, discarding the centre core.
  2. Add all ingredients to a medium-sized bowl and toss to coat.
  3. Enjoy on its own or as a side with any meal.
