- 1 large bulb of fennel
- 2-3 garlic cloves, finely chopped or grated
- 3 tablespoons of olive oil
- 2 tablespoons of white balsamic vinegar
- Salt and pepper to taste
- Wash fennel bulb and cut into small bite-sized pieces, discarding the centre core.
- Add all ingredients to a medium-sized bowl and toss to coat.
- Enjoy on its own or as a side with any meal.
