Makes: approximately 1 cup
- 1/2 cup of soaked cashews
- 2 clementines, zest and juice
- 1 lemon, juiced
- 1 tablespoon of tahini
- 1 tablespoon of apple cider vinegar
- 1 strand of green onion
- Salt and pepper
- Mix all ingredients in a blender until creamy and pour over your favourite salad.
Tip: you can use an orange if clementines are not in season.
